Our tea leaves

The story of our kombucha begins with tea, the heart of every brew.

We use organic green sencha from the misty mountains of China, blended with bold, full-bodied organic black tea from Sri Lanka, India and Mozambique.

The green tea brings light, grassy brightness; the black tea adds warmth and depth. Together they create a clean, balanced foundation, ready for fermentation and our cultures to thrive.

Our living culture

At the heart of every batch is the SCOBY - a living culture of bacteria and yeast, passed down through generations. Ours comes from a long-nurtured lineage, known for producing a balanced, thriving brew. It transforms our tea base into kombucha, shaping every batch and every pour.

Our fuel

Every brew needs energy, ours comes from organic cane sugar. Sourced for purity and consistency, it’s clean, certified organic and ideal for fermentation. It’s not there for sweetness, but as the essential fuel that powers the process.

We pair it with a specialist brewing yeast, chosen for its smooth, steady fermentation and clean finish.

  • A Bruu Base is the living foundation of your kombucha.

    We start with a carefully selected blend of organic sencha green tea, black tea and sugar, then ferment it under a SCOBY (Symbiotic Culture of Bacteria and Yeast) for 4–6 months to develop deep, complex flavour and a stable, active culture.

    With bruusta, you don’t need to care for a SCOBY yourself, it’s already built into the base. The visible jelly-like disc (the pellicle) isn’t what makes kombucha work; what matters are the living bacteria and yeast in the liquid.

    When you add water and yeast inside your Bruusta, our closed system reactivates the culture and
    fermentation begins again, just like traditional kombucha, but without the mess or guesswork.

  • Because kombucha isn’t just flavoured tea, it’s fermented.

    Our Bruu Base has already been carefully fermented under a SCOBY for 4–6 months using organic green and black teas. During that time, a stable, active culture develops in the liquid, this is what makes real kombucha possible.

    When you add water and yeast inside your Bruusta, that culture reactivates and fermentation begins again in a controlled way. The balance of tea, sugar and live culture has been
    precisely developed to work with the Bruusta system, so you get consistent flavour, fizz and performance every time.

    Think of it as your brewing starter. It’s what turns water into fresh kombucha.

  • We know many kombucha lovers are familiar with brewing using a traditional SCOBY and we love that enthusiasm.

    However, the bruusta system has been carefully designed to work with our specifically developed bruu bases. Each base contains a precisely balanced blend of tea, sugar and a stable, active culture that has been fermented over months to perform to perform reliably inside a closed, pressurised brewing system.

    Introducing an external SCOBY or homemade starter would change that balance and could affect fermentation performance, carbonation and overall results. For that reason, we only support brewing with official bruu bases, and using anything else would void your warranty.

    The good news? You still get real fermentation happening in your kitchen, just without the need to store, feed, maintain or manage a SCOBY yourself. Each packet contains a fresh, stable culture, creating the same natural fermentation process, refined for
    simplicity and consistency.

  • Each bruu base makes one full batch in your bruusta creating 5L which is about 21 servings of an 8oz glass.

    If you like to keep a continuous supply going, many customers choose to rotate batches with a bruusta buddy so there’s always one brewing while one is chilling.

  • Each bruu base arrives as a complete bruu pack.

    A bruu pack contains everything you need to brew one full batch in your bruusta.

    Inside each pack you’ll find:

    One Bruu Base – the living, fermented tea foundation that contains the carefully developed culture needed to create
    kombucha.

    One yeast sachet – added at the start of
    brewing to kickstart fermentation and ensure consistent carbonation and
    performance.

    One purifier sachet – used to sanitise your bruusta between batches, keeping your system clean and ready for your next brew. (This is not added to your kombucha.)

    Each element has a purpose. The Base provides the culture and flavour, the yeast activates fermentation inside the system, and the purifier keeps everything running smoothly from batch to batch.

    It’s brewing made simple, no extra ingredients, no guesswork.

    This level is comparable to that found in certain everyday fermented foods and beverages, such as ripe fruit, fresh juice, or bread. While the alcohol content is low, it is present.

    If you are pregnant, breastfeeding, avoiding alcohol, or considering serving kombucha to children, we recommend consulting a qualified health professional before consuming.

  • Yes, and we especially recommend doing this with the Original Bruu Base.

    Original is designed to be clean and versatile, making it the perfect foundation for adding Flavor Shots by the glass. It allows you to create different flavour combinations from a single batch without committing the whole brew to one taste.

    You can also add Flavor Shots to our other bases if you love bold, layered flavour. That said, our flavoured Bruu Bases are carefully balanced and are delicious on their own.

    It’s entirely up to you, subtle and refreshing, or vibrant and expressive.
