It works because of two things: The bruusta, your brewing device, a one-time purchase and a bruu base, required for every batch. From there, flavor shots are yours to play with: entirely optional, endlessly mixable. To start brewing, you'll need both a bruusta and a bruu base.

the bruusta is a sealed, pressure-controlled vessel that brews, carbonates, and serves your kombucha without ever needing gas canisters or bottling.

a calibrated valve manages pressure safely while preserving natural fizz, and the integrated tap pours with minimal oxygen exposure, keeping every glass fresh until the last.

    everything the ferment needs is already in the base: tea, sugar, and a living culture.

    the yeast we add gets to work on the sugars first, producing alcohol and CO₂. the bacteria follow, turning that alcohol into organic acids, the source of kombucha's tang, and what makes it gut-friendly.

  • days 5–6 · in the fridge

    conditioning

    once your brew hits the fridge, fermentation slows down.

    this is the ‘conditioning’ phase, where the natural carbonation reabsorbs into the liquid, smoothing out the fizz. Flavours mellow and settle, giving you a crisp, clean pour that’s delicious straight from the tap. The cooler temperature also helps stabilise the brew, lock in flavor and preserve freshness.

    at the heart of every kombucha brew is a scoby, a living culture of bacteria and yeast that kicks off fermentation. when you add our bruu base to your bruusta, this culture wakes up and gets to work.
