Your brew pack has everything you need. Just add water, wait 4 days, and let the bruusta do the rest.

After 2 days in the fridge natural carbonation builds giving your kombucha its light refreshing fizz.

Pour as much or as little as you like. No bottling, no kegs, just fresh kombucha on tap.

What's happening inside the bruusta?

brewing (days 1-4, on the dock)
This is where the magic begins.
The yeast in your brew starts feeding on natural sugars, producing alcohol and CO₂ (bubbles!). Then, the beneficial bacteria get to work—transforming that alcohol into organic acids and other healthy compounds. These acids are what give kombucha its tangy edge, while also lowering the pH to keep things balanced and gut-friendly. -
conditioning (days 5-6, in the fridge)
Once your brew hits the fridge, fermentation slows down.
This is the ‘conditioning’ phase, where the natural carbonation reabsorbs into the liquid, smoothing out the fizz. Flavours mellow and settle, giving you a crisp, clean pour that’s delicious straight from the tap. The cooler temperature also helps stabilise the brew, lock in flavor and preserve freshness.
