Our pressurized, closed system unit takes care of all the many steps in home-brewing; reducing the overall effort per batch to under 10 minutes and the entire process to only 6 days. how it works

  • 1. prep

    Pour in the bruu base, yeast and water. Close and shake. Attach to the bruu dock.

  • 2. brew

    Leave on the bruu dock to ferment for 4 days.

  • 3. refrigerate

    Remove from the bruu dock and move to the refrigerator for 2 days.

  • 4. enjoy on tap

    Your kombucha is now ready to enjoy and will stay fresh for up to 21 days.

What's happening inside the bruusta?

  • brewing (days 1-4, on the dock)

    This is where the magic begins.

    The yeast in your brew starts feeding on natural sugars, producing alcohol and CO₂ (bubbles!). Then, the beneficial bacteria get to work—transforming that alcohol into organic acids and other healthy compounds. These acids are what give kombucha its tangy edge, while also lowering the pH to keep things balanced and gut-friendly.

  • conditioning (days 5-6, in the fridge)

    Once your brew hits the fridge, fermentation slows down.

    This is the ‘conditioning’ phase, where the natural carbonation reabsorbs into the liquid, smoothing out the fizz. Flavours mellow and settle, giving you a crisp, clean pour that’s delicious straight from the tap. The cooler temperature also helps stabilise the brew, lock in flavor and preserve freshness.
