Our bruu base is made the traditional way using the finest organic black and green teas, fermented over 4-6 months to develop rich complex flavours packed with beneficial bacteria.

how our kombucha comes to life

  • At the heart of every kombucha brew is a SCOBY a living culture of bacteria and yeast that kicks off fermentation. When you add our bruu base to your bruusta, this culture wakes up and gets to work.

  • The yeast we add starts by feeding on sugar, creating tiny amounts of alcohol and CO₂, while the bacteria convert that alcohol into gut-friendly organic acids.

  • This is the same biological process used in traditional home brewing, just made simpler and more consistent with our long-fermented base. No corners cut, no shortcuts, just real fermentation, happening in your home.

Our base is made using organic green sencha tea from the misty mountainous regions of China, blended with bold full-bodied organic black tea grown in Sri Lanka, India and Mozambique.

The black tea we use comes from humid hillsides and sun-drenched plateaus, where deep roots and rich soil give the leaves their strength.

The green tea brings a light, grassy brightness; the black tea, warmth and depth. Together they create the perfect foundation for fermentation - balanced, clean and ready for our cultures to thrive.

Our fuel

This simple ingredient fuels the transformation, giving our cultures what they need to thrive. We pair it with a specialist brewing yeast, selected for its smooth, steady fermentation and refined finish.
