Purifying
A sterile environment is the essential first step in brewing. Once purified, your bruusta is ready to make fresh kombucha. Purifying is expected to take around 5 minutes.
Set carbonation dial
Rotate the carbonation dial clockwise to 5.
Remove parts
Unclip the tap handle sideways, remove the front plate and unscrew the main cap.
Check tap collar
Check the tap is fully screwed into the bruusta.
Add purifier
Add purifier into the bruusta. Please ensure you read the safety instructions on the label before use.
Add hot water
Fill to the internal black line with water from the hot tap.
Add conical to main cap
Ensure the conical is fitted to the main cap.
Screw on the main cap
Screw the main cap back on ensuring the handle is folded down.
Shake the bruusta
Shake the bruusta using both handles for 30 seconds in order to mix the contents.
Attach the bruu dock
To attach the bruu dock, align and slightly press on the centre while rotating anti-clockwise. Then keep pushing down while rotating back to the aligned position.
Check bruu dock alignment
Check the bruu dock is aligned as shown in the image.
Turn over and wait
Turn the bruusta and bruu dock over, set aside for 10 seconds.
Purify the bruu dock
In the sink, hold the bruu dock and rotate anti-clockwise to release purified bruu dock. Empty the bruu dock.
Carbonation dial to OFF
Rotate carbonation dial anti-clockwise to off.
Purify the carbonation dial
Turn the bruusta upside down, lift it, and let purifier flow through the carbonation dial for 10 seconds. When set to the off position, the carbonation dial is open and will let water through the valve.
Attach the handle
Push the tap handle down onto the tap to attach it.
Purify the tap
Reattach the tap handle and pour for 5 seconds to purify the tap.
Empty the bruusta
Remove the tap handle, unscrew the main cap and pour all the purified water out. No need to rinse.
Brewing
During the brewing stage, the yeast kickstarts the fermentation of the starter base and the foundations to activate taste and aromas are laid. The SCOBY (symbiotic culture of bacteria and yeast) converts sugars into alcohol, natural CO2 and other healthy compounds. Prepping the brewing stage is expected to take around 10 minutes.
Set carbonation dial to 5
Rotate the carbonation dial clockwise to 5.
Add bruu base
Pour the contents of your bruu base into the bruusta.
Add water to the fill line
Fill with lukewarm water to the internal black line.
Add brewing yeast
Pour the contents of your brewing yeast into the bruusta.
Screw on the main cap
Screw the main cap back on ensuring the handle is folded down.
Shake the bruusta
Shake the bruusta vigorously for at least 60 seconds. This is vital to the success of your bruu.
Attach the bruu dock
To attach the bruu dock, align and slightly press on the middle while rotating anti-clockwise. Then, keep pushing down while rotating back to aligned position.
Check bruu dock alignment
Check the bruu dock is aligned as shown in the image.
Turn the bruusta over
Turn the bruusta and bruu dock over so brew dock is underneath and leave in a safe space at room temperature for 4 days.
Leave to Bruu
Leave to brew for 4 days at room temperature between 16-25 degrees C (60.8 - 77 Fahrenheit). Some hissing is normal. If you have brewing notifications enabled in the app, we will send you a notifiation when its time for the next stage.
Conditioning
During the conditioning stage, the bruu dock is removed, and the bruusta placed in the fridge. This is where the final taste develops, and the CO2 produced during the fermentation stage is re-absorbed to naturally carbonate your kombucha. Prepping the conditioning stage is expected to take 5 minutes.
Remove bruu dock
In the sink, hold the bruu dock and rotate anti-clockwise to release. There may be a release of liquid and pressure.
Clean bruu dock
Rinse bruu dock thoroughly, leave to dry.
Clean main cap
Wipe away any residue from main cap.
Condition in fridge
Leave your bruusta to condition for 2 days at fridge temperature, from 0-4C. If you have brewing notifications enabled in the app, we will send you a notification when it’s time for the next stage.
Tapping
Welcome to the good life on tap! Pour fresh kombucha directly from your bruusta using the active pour tap. Kombucha will stay fresh in your fridge for up to 21 days.
Tapping
To start pouring, pull gently on the handle. For best results, hold a dry clean glass at 45 degrees.
Gently pull forwards
How far you pull will control the flow of the kombucha.
Pouring too slowly?
As the bruusta empties and pressure drops the flow will slow, so pull the handle further for a good pour.
Carbonation dial off
If emptied quickly, the pressure may drop to zero. If so, turn the dial off to let air in allowing final pouring.
Carbonation dial to 5
If the dial is off and the bruusta is not empty, return the dial to setting 5 after tapping to ensure the kombucha stays fresh.

Cleaning
It's essential that your bruusta is cleaned thoroughly immediately after every use. This provides the right conditions for purifying and brewing the next batch. Cleaning is expected to take around 10 minutes, after which you're all set to start again.
Empty through tap
Before cleaning, open the tap fully for a few seconds to remove all the remaining CO2 and kombucha.
Turn the carbonation dial to off
Rotate the carbonation dial anti-clockwise to off. There will be a release of pressure as the remaining CO2 escapes.
Carbonation dial to 5
Rotate the dial clockwise to 5 again once the CO2 has been released.
Remove parts
Unclip tap handle sideways, remove the front plate and unscrew the main cap.
Remove conical from main cap
Detach the concial from the main cap, clean both with soapy water and set aside to dry.
Unscrew tap
Unsrew the tap collar and remove the yeast shield, clean is with soapy water and set aside to dry.
Clean Tap
Clean the tap with soapy water.
Open the tap and clean
Using the handle open the tap and run warm water through the spout.
Clean through tap
Keep the tap open and run water through the back. After cleaning, keep the tap open and drain liquid from both ends. Set aside to dry.
Carbonation dial and hopping cap
Rotate carbonation dial anti-clockwise to off. Unscrew the hopping cap, unclip the inner part, and flip it as shown in the animation. This will open the valve for cleaning.
Fill bruusta
In the sink, fill the bruusta with warm water from the hot tap.
Drain through
Lift the bruusta and let water flow through the carbonation dial and hopping cap for 20 seconds.
Replace hopping cap
Unscrew the hopping cap. Unclip the inner part and replace so it's not extended.
Empty bruusta
Empty the remaining water, rinse to remove the remaining soap.
Leave to dry
Your bruusta is now ready to go back to the purifying stage for your next use, otherwise leave the parts to fully dry before reassembling and storing.
